SRL «Innovative Restaurant Technologies and Physico-Chemical Research of Food Products» was established in 2015 on the basis of the Department of Technologies in Catering Business and Hospitality Industry of Mykhailo Tuhan-Baranovskyi Donetsk National University of Economics and Trade. Since 2019, the Laboratory operates on the basis of the Department of Technology in Restaurant Business, Hospitality and Entrepreneurship.

The purpose of the Laboratory is conducting theoretical and applied research in the field of food technology, aimed at substantiating and developing the latest technologies of semi-finished products and products with a given structure and functional properties, implementing research results in practice and learning process.

Main research areas are:

  • scientific substantiation of innovative technologies
  • creation of functional products and products obtained through energy and resource-saving technologies
  • development of functional products with low caloric content, high nutritional value, enriched with vitamins, minerals, dietary supplements
  • development of treatment and prevention products
  • regulation of technological properties of raw materials
  • physico-chemical studies of food products.
